Ingredients
- 450g extra firm or firm tofu
- 1 Tbsp coconut oil
- ¼ tsp turmeric
- 2 tsp nutritional yeast
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp of garlic powder (optional)
- Pinch of chilli flakes
- 3 Tbsp Cashew nut butter
- 3 Tbsp water
- Use any seasonal vegetables such as: Sweet peppers, baby spinach, mushrooms, tomato, and onion to make a lovely colourful base for the scrambled tofu.
Tip: ¼ tsp of black salt will give this dish an eggy
Method
- Remove the tofu from its packaging and drain excess fluid.
- Over low heat, add the coconut oil to a frying pan, and crumble the tofu into uneven pieces.
- Cook for about 5 minutes, then add all the remaining ingredients and let it simmer for another 5-10 minutes.
- Prepare the vegetables and use them as a fresh base for the scramble or lightly stir the veggies in the same pan.
- Serve as is or add a low GL option such as: rye bread or oat cakes.
Additional options for spices to add: cardamom, paprika, ginger, cayenne or onion powder.
